Unagi - Eel

Unagi-don, also known as unadon, is a popular Japanese dish consisting of grilled eel served over a bed of rice. It is a type of donburi, which refers to a bowl of rice topped with various ingredients. Unagi-don specifically features grilled eel as the main component.

To make unagi-don, freshwater eel (unagi) is typically filleted, deboned, and grilled over charcoal. The eel is glazed with a sweet soy-based sauce called "tare" during the grilling process to impart a rich and savory flavor. The grilled eel is then placed on a bowl of steamed rice.

The eel used in unagi-don has a tender texture and a distinctive taste. The combination of the smoky, slightly charred eel and the sweet glaze creates a delicious contrast of flavors. The dish is garnished with thinly sliced green onions or a sprinkle of sesame seeds for added aroma and spice.
